For the beef marinade:
•2 tbsp of the mixed sauce
•1 tsp cornstarch
•1/2 tsp baking powder
•1 tbsp water
•1 tbsp oil
•Thinly sliced beef (around 300g)
Instructions:
1. Prepare the Beef Marinade
Combine 2 tablespoons of the mixed sauce, cornstarch, baking powder, water, and oil in a bowl.
Add the sliced beef, ensuring it's evenly coated. Let it marinate for 20 minutes.
2. Stir-Fry the Vegetables
Heat a pan or wok with a little oil over medium-high heat.
Add the onions, garlic, spring onions, cabbage, and bean sprouts. Stir-fry for 2-3 minutes until slightly tender.
Remove the vegetables from the pan and set aside.
3. Cook the Beef
In the same pan, add the marinated beef. Sear it on high heat for 2-3 minutes until browned.
Add a small amount of water to the beef and let it simmer briefly until the liquid thickens slightly.
4. Add the Udon Noodles
Toss the fresh Udon noodles into the pan with the beef. Stir-fry for 1-2 minutes to combine.
5. Add the Sauce
Pour the prepared sauce over the noodles and beef. Mix everything well, ensuring the sauce coats the noodles evenly.
6. Finish with Vegetables
Return the stir-fried vegetables to the pan. Toss everything together for another 2 minutes until heated through.
Add bean sprouts just before serving for extra crunch.
